Healthy Breakfast Inspiration- 5 SIMPLE RECIPES

Breakfast is often considered to be the most important meal of the day so it shouldn’t be skipped because of morning rush. I would love to share with you a few of my favorite breakfast recipes. All of them are healthy, super simple to make and delicious!

Coconut Vanilla Chia Pudding

I love chia seeds!  They're a good source of fiber, protein, and other nutrients. You can throw this chia pudding together in just a few minutes. I prefer to make this at night so my breakfast for the next day is ready when I wake up. It is also great to make it in the morning for a delicious pre-made dessert that you can have after your lunch.

In a small jar, combine 1/2 cup of coconut milk, 3 tbsp of chia seeds and 1 tsp of vanilla powder. Stir well. Place the jar into the fridge for at least 2 hours or best overnight. Top with mango pieces, nuts and almond flakes. Enjoy!

Home-made Granola

I'm a big fan of home-made granola! Every Sunday I bake a new batch of granola so I’m always ready for the next week. I always change a recipe a bit, you can add anything you like to your granola. Chocolate, dried fruits, nuts, seeds, spices..nothing's off limit here!

Basic Granola Recipe:

INGREDIENTS

  • 2 cups rolled oats
  • 3/4 cup mixed nuts, chopped
  • 2 tbsp chia seeds
  • 1/3 cup maple syrup or honey
  • 1/3 cup melted coconut oil or melted butter
  • 1/2 tsp cinnamon or vanilla powder
  • And your favorite ingredients: chocolate chips, dried fruits, pumpkin seeds, coconut chips...

DIRECTIONS

Preheat oven to 150°C. Mix all the ingredients together (apart from the dried fruits and chocolate chips) in a large bowl. Spread the granola out on a lined baking tray. Bake for 35-45 minutes, stirring every 15 minutes. Remove from the oven and let cool completely, until the granola has set. When the granola reaches room temperature, mix in the rest of the ingredients. 

I like my granola with almond milk and berries. It's also a perfect snack that you can enjoy on its own or you can have it with a yogurt. Sometimes I make a yogurt parfait with chocolate granola and fruits as a dessert. You can also add it to your favourite cookie or muffin recipes.

Avocado toast

As you can see, I love sweet breakfast, but from time to time, it's good to have something different. Avocado toast is technically just a sliced or smashed avocado on top of a piece of toast — so simple — but when you take one bite you will quickly realize that it is so much more than that. I like my toast with poached egg or roasted tomatoes. So simple yet so delicious!

You can use any kind of toast or sliced bread you have but I like to use crusty bread or whole grain toast. Put avocado slices on your toast, then top witch poached egg er roasted tomatoes. Sprinkle with sea salt and freshly ground black pepper. Enjoy!

Poached Egg: Pour 2 tablespoons of vinegar into the pot filled with water. Crack an egg into a small bowl. Bring the water to a boil, then reduce temperature. Using a spoon, swirl water in pan in a circular motion until a whirlpool forms. Gently slip 1 egg into center of whirlpool. Poach the eggs for 2-3 minutes.  Using a slotted spoon, remove egg from pan and place on a plate lined with paper towels.

Roasted Tomatoes: Cut cherry tomatoes in half. Heat 1-2 tbsp of olive oil in a frying pan, add tomatoes, season with salt and pepper. Fry for about 4 minutes while stirring constantly.

Yogurt-Berry Parfait with Oats & Peanut Butter

This is my favorite breakfast parfait at the moment. It takes only 3 minutes to throw together and you can also make it the night before. 

Simply mash up 1/4 cup of berries with a fork. Then layer the yogurt, (I used the coconut one mixed with 1tsp of vanilla powder) oats, berries and peanut or almond butter in a jar. Easy-peasy! :)

Spelt crêpes filled with Coconut Yogurt

 I love traditional thin crepes made with eggs, milk, flour, a pinch of salt and butter. You can also serve them as a dessert with a salty caramel sauce. Yum!

In a large bowl, combine 100 g spelt flout, 200 ml milk, 1 tbsp of melted butter, 2 eggs and a pinch of sea salt. Heat a frying pan on medium heat. Add a very small knob of butter. Spoon the batter into the pan. Fry on both sides until golden. Fill pancakes with coconut yogurt.  Drizzle melted chocolate over your pancakes and serve with berries.
