Salut à tous,
des escalopes de veau farcies avec de la viande et des girolles.
Comme farce j'utilise de la chair à saucisse.
Rajouter un peul d'échalotte et de persil haché, et les plus petites giroles grossièrement hachées.
Aplatir les escalopes et les garnir de farce.
Les replier comme des petits rôtis.
Faîtes les revenir, une fois colorées, déglacer au vin blanc et laisser mijoter 30 minutes.
Pendant ce temps faîtes revenir rapidement les grosses giroles à la poêle.
Quand les paupiettes sont cuites, les débarrasser et mettre les girolles dans le jus et laisser réduire.
