Qurator's: Hive Top Chef! | Breaded Cheesey Vegan Eggplant

Today I made a simple and quick vegan recipe Qurator's: Hive Top Chef Challenge, using an eggplant. I use this recipe a lot and it's the best when done in the oven. I ran out of baking paper so I fried them in a pan today and they were also great.
We had them for lunch today with some crunchy fresh kale and a homemade ketchup-like sauce.

Ingredients:

  • 1 large eggplant
  • 50 g of breadcrumbs
  • 30 g of all-purpose flour
  • 3 tablespoons of nutritional yeast
  • 1 tablespoon of sesame seeds
  • 1 teaspoon of red sweet paprika powder
  • 80 ml of oat milk
  • 1 tablespoon of all-purpose flour
  • olive oil
  • salt to taste

Preparation:

  1. Toast sesame seeds in a hot dry pan.

  2. In a bowl mix dry ingredients: breadcrumbs, all-purpose flour, nutritional yeast, sesame seeds and sweet red paprika powder.

  3. In a separate bowl mix oat milk with a tablespoon of all-purpose flour.
  4. Slice an eggplant and dive it in oat milk first then cover it with dry ingredients.

    Lightly press it into the surface of eggplant slices. Leave it to sit for a few minutes on the counter.

  5. Cover the baking tray with baking paper and place eggplant slices on it. Spray them with olive oil, turn them around and spray on the other side as well.
  6. Place it in a preheated oven on 230°C or fry it in a pan with just a little bit of oil.

  7. Salt them to taste before serving. Serve it with some crunchy vegetables and a homemade sauce.

This kind of fast food, it's very quick and simple, works great with zucchini too.

This looks so good! I have been searching for a way to use eggplant in a way that is healthy and tasty. I am going to use this one! I must resist my urge to fry this and bake it as you did. Much healthier.

Believe me is worth it I sometimes like fried foods better but eggplant soaks up so much oil that I feel sick after. Since I'm making it in the oven or in the pan with just a bit of oil I can actually taste the eggplant. I like it most in the oven as it bakes eaqaly and if I turn on the oven on a higher heat they come out very crispy (it's easy to burn them like that too 😅)

Oh yes, that was the problem I had last time! I tried to fry them and they sucked up all the oil like a sponge. The baked version sounds amazing with that crust and seed mix! I love a toasted sesame seed. And yes, things can burn so quick, but the higher heat pays off with tremendous amounts of awesome flavour if you time it perfectly!

Exactly! I really like fried potatoes in oil but eggplant or zucchini really soaks up too much fat and before the end of frying the oil is already burned because of the breadcrumbs.
Oven and watching out the temperature definitely pays off here!

Maybe one can use the eggplant and zucchini in stews to soak up all the lovely "stew juice"! 🤣
