Peppermint Mocha Chocolate Chip Cookies

We recently sent Amy Wilichowski of @eatsbyames some of our Colombia Magdelana beans to use in a cookie recipe that she created just in time for the holidays - Peppermint Mocha Chocolate Chip 🍪🍫☕️

Treat yourself, friends & family with these delicious cookies - Happy baking!

Ingredients

  • 1 cup paleo baking flour
  • 1/3 cup organic coconut sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tbsp ground coffee
  • 2 crushed candy canes
  • 1-2 cage free eggs
  • 1/3 cup extra virgin unrefined coconut oil
  • 1/2 tsp vanilla
  • 1/3 tsp peppermint extract
  • 1/4 cup dark chocolate chips

Directions

  • Heat the oven to 350
  • Combine paleo baking flour, organic coconut sugar, baking soda, baking powder and crushed candy canes in a mixing bowl
  • Add in wet ingredients and mix well
  • Fold in dark chocolate chips
  • Roll the dough into balls or use a small ice cream or cookie scoop
  • Place about 2 inches apart onto ungreased cookie sheet
  • Pop them in the oven for 10-12 minutes
  • Add on some extra candy cane for the last five minutes
