Nyala's Crushed Potato
Ready In : 40 minutes
Can make up to: 4 servings
INGREDIENTS:
two and quarter cups baking potatoes, diced and peeled
one and quarter cups sweet potatoes, diced and peeled
one cup frozen whole kernel corn, thawed and drained
quarter cup light coconut milk
one tablespoon olive oil
one tablespoon butter
one teaspoon curry powder
half teaspoon salt
quarter teaspoon ground turmeric
INSTRUCTIONS:
Put potatoes in a pan; wrap with water. Bring to a boil. Lessen heat, and simmer ten minutes or till potatoes are almost smooth. Put corn to frying pan; cook five minutes or till potatoes are soft. Strain well. Put potato mixture in a large sized dish, and crush potato mixture with a potato masher.
Mix coconut milk, oil, and butter in a small dish; bring to a boil. Blend milk mixture, curry, salt, and turmeric into potato mixture.
