Balkan Cuisine #4 - Homemade Poppy Seed Strudel

Dear Steemians, here's another recipe from the Balkans. Namely, poopy seed strudel is a famous dish in Central and Eastern Europe, also in other parts of the world. But, strudel is very popular in the Balkans for a long time. Strudel is often made in these area, with poppy, carob or nuts. That is why it is an integral part of the Balkan cuisine.

The oldest recipe for the strudel comes from the 17th century and is kept by the Vienna City Library. What's the taste of the oldest strudel in the world I do not know, but here's my delicious recipe from the Balkans:)

Ingridians

For the Dough:

  • 600 g of flour
  • 200 ml of milk (warm)
  • 50 ml of oil
  • 1 package yeast (25 g)
  • 100 ml of worm water
  • 2 tablespoons of sugar
  • zest of 1/2 lemon

For the Poppy Seed Filling:

  • 300 g of ground poppy seed
  • 300ml of milk
  • 10 tablespoons of sugar

Instructions:
Combine 200 ml of lukewarm milk with yeast and 2 tablespoons of sugar, and let yeast dissolve for 5 minutes. After that in a larger bowl put the flour, dissolved yest, oil, water and lemon zest and knead smooth dough. Sprinkle the top with a little flour and cover. Leave dough for 30 minutes at room temperature and let it rise until double its size.

While the dough is growing, prepare poppy seed filling. Heat milk and sugar over medium-high heat. Then add 300 g of ground poppy seed and cook for 5 minutes until slightly thickened and smooth.

Split the dough into three equal parts. Put the dough on the floured surface. Roll out to form of rectangles. Spread with cool poppy seed filling and roll up. Place strudel on greased cookie sheet and spread yolk on top. Bake at 230 degrees C for about 45 minutes until brown. When the strudel is roasted, remove it from the oven and cover with a clean cloth to rest a little. Thereafter cut and sprinkle with powder sugar.
