So I was feeling the need for some home flavor so I ordered banana chips from Irie876.com and for a few extra yens I got some pepper.
What should I do with these bad boys I thought. Haha! Let’s make some of that wicked escovitch sauce that made all those fried fish and tofu dish so delicious in Ja.
What do I need to make it happen?
- Vinegar (had none - off to supermarket I went )
- Pimento seeds /all spice (check)
- onions 🧅 (check)
- hot pepper (check)
- optional stuff - radish
- cucumber 🥒
- sugar
- garlic
- carrots
Chop and dice all the goodness.
Cut the onions 🧅 circular for best results, the optional veggies you can cut to your preferred shape.
Let’s cook 👨🏾🍳
Use 1-2 teaspoons of oil to a frying pan. (I used my faithful old pot)
When the oil is hot add your hard veggies then the softer ones and sauté them for about 2-3 minutes.
After that add your vinegar depending on how much sauce you want to make.Bring it to a boil for about two minutes. I added a bit of sugar because that vinegar was really sour. Let everything cool and add to jars or tightly sealed plastic. This will last a while but you should probably put it in a refrigerator to be safe. Enjoy with fried fish , tofu , chicken or anything you like. Let me know what you eat it with that’s Not common - I’d love to try it.
