Whole chicken, leaving all the heart is essential ingredients for this dish. To bring fragrance, sweet taste to the dish, the chicken must be rinsed with rice wine and stuffed with scallions, ginger, soybean, seasoning powder and some Chinese herbs into the chicken's stomach.

The beggars are created in a very special situation. A homeless man in Hangzhou, in a famine, risked stealing from the garden in a roadside house to soothe the rumbling of the empty stomach that had come days. He was setting fire and preparing to chickens suddenly, His Majesty and his courtiers are approaching. In a panic, he took the chicken back and threw it into the fire. The aroma from the chicken was thrown into the fire and it attracted the Highness to stop and eat with the beggar. Surprisingly, the food was so good that the king insisted on knowing how to make this dish. As a result, this roast chicken was added to the menu in the king's palace and became a very popular dish to this day.

Whole chicken, leaving all the heart is essential ingredients for this dish. To bring aroma, sweet taste to the dish, the chicken must be rinsed with rice wine and stuffed with green onion, ginger, soybean, seasoning powder and some Chinese herbs into the chicken's stomach. Chicken flavor is stronger and reduce the smell of foul smell. Before wrapping mud and baking in fire, people took lotus leaves or palm leaves to cover the chicken.

The wrapper will help the chickens not get muddy, but also the natural fragrance of the leaves. Chicken wrap should also be meticulously molded with water and 1 kg of salt. This amount of salt does not change the taste of the chicken, but it will help the mud layer harden and not go out during the baking process.
