I just like banana, not all the other stuff. I like walnuts but not in my brownies, banana bread, or cookies.

Well, it's good that you get to make what you like best, I reckon. I've got a pumpkin on the porch Imma try to do something with soon, probably my next attempt will be pumpkin bread.
You also might like subbing in 50% whey protein for flour, as it does make the bread moister.
Most pumpkins on your porch are not good for baking, I recommend baking pumpkins, they are smaller and have sweeter and less mealy taste. They will work but not ideal.
I never et a punkin afore. Imma try it.
I literally sold this recipe for $500 to a cafe under my old employers he liked it so much. It's a lot of work you got to peel the pumpkin inside and out, then put it through a food processor to mulch it.
Turns out I am 9 jars (~5 gallons of apples) into canning applesauce, and still have ~15 gallons of apples to peel and core, then to boil, mash, and can up. Hopefully the pumpkin will await my readiness without degradation. I'd like to try this recipe.
What about the yummy coconut bars? I am particularly fond of coconut, I confess.
The cheese cake is pretty complex recipe, if you want it I can post it in multiple images, I have a very simple recipe too with coconut.
Crack! Crack and coconut - two of my favorite things! /s
Sounds super yummy. I am in the midst of several frenzies atm, but will be happy to be granted your recipes per your favor. I may not make them tomorrow (I'll be painting a house), but will be likely to when frenzy permits.
Edit: oh dear. I had my recipe for banana bread memorized, but now I'll have to learn Docker and Proxmox stuff because my lame brain will be overwhelmed. Got any cheap minicomputers? lol j/k
