Hey guys, I don't get on here as much as I'd like these days but thought I'd pop in quickly to share this amazing cake I made over Easter! It was a massive hit and my whole family (all omni) said it was the best carrot cake they've ever had- such a massive win for veganism! 🥕

It requires quite a lot of ingredients but is really pretty simple to make, so it's easy to impress with this no-fuss recipe!

Cake ingredients:

  • 135g walnuts
  • 1 orange
  • 135g sultanas
  • 400g self-raising flour

  • 240g soft light brown sugar
  • 1/2 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 400ml soya milk
  • 160 ml vegetable oil

For the lemon buttercream icing:

  • Add the carrot, walnuts, orange zest and sultanas and stir until fully combined.

  • Divide the cake mixture between the two tins.

  • Bake for 25-30 minutes until a knife or skewer comes out clean. Leave to cool in the tin for 5 minutes, then turn out onto a cooling rack and leave until fully cool.

  • Meanwhile add the icing sugar, vegan butter, vanilla, apple cider vinegar and lemon juice to a bowl and mix with a hand blender.

  • If your frosting ends up too thin, add more powdered sugar. If it is too thick, add a little water.

  • Add frosting to the top of one of the layers, then add the other layer on top and complete the frosting of the top and sides of the cake.

  • Sprinkle crushed walnuts on top of the cake and serve.
