Bring a taste of Mexico to your grill with these delicious Pork Skewers, or Alambres de Puerco. Infused with a flavorful homemade marinade, these skewers are perfect for any grilling season. Easy to prepare, they offer a delightful combination of juicy pork and fresh vegetables that are sure to impress your friends and family.

Ingredients:

  • 🌶️ 4 guajillo peppers, seedless
  • 🧅 1/2 onion
  • 🧄 6-8 garlic cloves
  • 🍅 3 Roma tomatoes
  • 🌿 1/4 tsp cumin seeds
  • 🥩 1 lb pork rib meat, large cubes
  • 🫑 1 bell pepper, large cubes
  • 🧅 1/2 onion, large cubes
  • 🥒 2 white zucchinis, thick slices
  • 🧂 Salt
  • ⚫ Black pepper

Instructions:

  1. Prepare the Marinade:
    • Add guajillo peppers, 1/2 onion, garlic cloves, and Roma tomatoes to a pot.
    • Cover with water and cook for 15 minutes or until all ingredients are tender.
    • Blend the mixture well and set it aside to cool.
  2. Marinate the Pork:
    • Cut the pork rib meat into large cubes about an inch thick.
    • Place the pork in a bowl and season with salt and black pepper.
    • Pour in the cooled marinade and mix until the meat is well-coated.
    • Allow to marinate for at least an hour—the longer, the better for more flavor.
  3. Prepare the Skewers:
    • Cut the bell pepper and the remaining onion into large cubes, similar in size to the pork.
    • Slice the zucchinis into thick slices, around two centimeters thick.
    • Soak bamboo skewers in cold water for at least 30 minutes to prevent burning.
  4. Assemble the Skewers:
    • Thread the ingredients onto the skewers in the following order: a piece of onion, pork, bell pepper, zucchini. Repeat the sequence twice more.
  5. Grill the Skewers:
    • Preheat the grill to medium-high heat.
    • Grill the skewers, turning occasionally, until the meat reaches an internal temperature of 145-150°F.
    • Avoid overcooking to keep the pork juicy and tender.

Cooking Tips:

  • Ensure the skewers are evenly balanced with each ingredient for even cooking.
  • Letting the marinade sit longer with the pork will yield a deeper flavor.
