Ingredients:

For the Habanero Pork:

  • 🐖 2 lb of pork meat, diced
  • 🌶️ 2 yellow or orange bell peppers
  • 🧂 Salt to taste
  • 🌑 Black pepper to taste
  • 🐷 1/4 cup of lard
    For the Salsa:
  • 🧄 4 garlic cloves
  • 🧅 1/4 of an onion
  • 🌶️ 5 habanero peppers, diced
  • 🍅 3 green or yellow tomatoes
    For the Rice:
  • 🍚 2 cups of white rice, long-grain
  • 🍾 4 tbsp of cooking oil
  • 🧈 6 tbsp of butter
  • 🧄 3 minced garlic cloves
  • 🍗 2 tbsp of chicken bouillon
  • 🧂 1/2 tsp of salt
  • 💧 3 cups of hot water

Instructions:

  1. Prepare the Salsa:
    • In a pot, place the garlic cloves, quartered onion, diced habaneros, and tomatoes.
    • Cover the ingredients with water and boil for 15 minutes, or until the vegetables are tender.
    • Blend the boiled vegetables into a smooth salsa and set aside.
  2. Cook the Rice:
    • In a large pan, heat the cooking oil over medium-high heat.
    • Add the rice and fry until it is slightly golden brown.
    • Stir in the butter and minced garlic until fragrant.
    • Add chicken bouillon, salt, and hot water; allow the mixture to come to a boil.
    • Reduce the heat to the lowest setting, cover the pan, and let simmer for 15 minutes or until the water is absorbed and the rice is cooked through.
    • Remove from heat and let the steam escape to prevent overcooking.
  3. Cook the Pork:
    • In a separate pot, melt the lard over medium heat.
    • Add the diced pork and season with salt and black pepper to taste.
    • Fry the pork until it becomes slightly crispy.
    • Add the bell peppers and prepared salsa to the pot.
    • Let the mixture simmer for 15 minutes, allowing the flavors to meld.
