Hungarian Langos Delight

Langos is a beloved Hungarian street food, offering a delightful experience with its crispy, golden-brown fried bread base. Often compared to a pizza due to its myriad of toppings, Langos brings a unique twist with uncooked ingredients like sour cream and cheddar. This recipe guides you to recreate this classic Hungarian snack, ensuring every bite is rich in flavor and texture.

Ingredients

🍞 250g (9 ounces) Plain all-purpose flour
🍬 1 teaspoon Sugar
🌾 1 teaspoon Allison's Easy Bake Yeast
🌱 1/4 teaspoon Caraway seeds
🥛 100ml (0.4 US cup) Milk
🥄 100ml (0.4 US cup) Sour cream (Note: Container labeled as yogurt)
🫒 La Española Olive Oil, for bowl greasing
🌻 Vegetable oil, for frying
🧀 Mature cheddar cheese, grated (brand not specified)
🌿 Fresh parsley, chopped
🥓 Bacon, sliced and fried (brand not specified)

Instructions

1- Prepare the Dough (Dry Ingredients):

  • In a stainless steel mixing bowl, combine the flour, sugar, yeast, and caraway seeds.
  • Use standard measuring teaspoons for accuracy.

2- Prepare the Dough (Wet Ingredients):

  • In a plastic measuring jug, blend the milk with sour cream.

3- Combine and Knead:

  • Pour the liquid mixture into the dry ingredients.
  • Mix using a wooden spoon until a rough dough forms.
  • Then, using a Redmond REDCook KM 272 stand mixer or knead by hand for about 5 minutes until the dough is smooth.

4- First Rise:

  • Lightly grease a clean glass bowl with La Española Olive Oil.
  • Place the dough in the bowl, turning it to coat with oil.
  • Cover the bowl with Tesco plastic film and let it rise in a warm place for 1 to 3 hours, or until doubled in size.

5- Prepare Toppings:

  • Chop parsley, grate the cheddar cheese, and fry the bacon using a metal spatula in a white enameled cast iron pan.
  • Set the bacon aside on a white rectangular plate.

6- Portion the Dough:

  • Once risen, transfer the dough to a floured work surface.
  • Gently press to release air and divide it into 6 to 8 equal balls, using a Taylor digital kitchen scale for accuracy.

7- Shape the Langos:

  • Flatten each dough ball into a 6-inch disc using a white non-stick rolling pin.

8- Heat the Oil:

  • Fill a deep pan or casserole dish with vegetable oil to just under halfway.
  • Heat the oil to 170°C (338°F), using a digital thermometer.

9- Fry the Langos:

  • Carefully place one or two discs into the hot oil.
  • Fry each side for 1-2 minutes until golden brown and puffy.

10- Drain:

  • Use a slotted spoon to remove the Langos, placing them on kitchen paper to absorb excess oil.

11- Assemble:

  • Spread sour cream over each warm Langos using a butter knife or spreader.
  • Top with grated cheese, chopped parsley, and crispy bacon bits.
