Very Berry Tiramisu Cheesecake Recipe - ready in 30 minutes 🍓🫐🍒

Hello foodies 💓

If you need a quick recipe for a fresh and easy dessert, this is one option to consider.
On the Holidays, I made a tiramisu *(my favorite dessert) and then I felt bad for only thinking at me because my husband is not really a tirsmisu fan and Caleb...well...he's just five! 🙈🤣

And he asked what dessert will I have? I felt instantly like being hit by a car realizing I didnt think at him, at all. Then I thought to use the creamcheese I already had, buy some mascarpone cheese and make...a sort of Very Berry Tiramisu/Cheesecake Dessert.
We're full of raspberries anyways (and other berries too in the freezer), digestive biscuits are always in the pantry to have sometimes with a cup of tea....so we're just fine making this fresh and cheesy berry dessert.

So we basically did this together, me and my son.
He mostly helped adding the layer of crushed digestive biscuits and in the end, decorated the way he wanted, adding raspberries, coconut flakes.

Can we add some candles too? So it looks like a birthday cake?

Sure....🤔 I said.

Ingredients:

(For two portions)


  • 500g mascarpone cheese
  • 500g cream cheese
  • 400g digestive biscuits
  • 200ml heavy cream
  • 100g powdered sugar (I'm not sure about this one, but from my experience 100g its enough)
  • 400g lady fingers
  • frozen raspberries and strawberries (or just one of these two)
  • the juice left by thawed berries

This is what you actually need to make it yourself. I think this recipe doesnt need precise measurements, you can make it with whatever you have in the fridge. You can have more cheesecake than mascarpone cheese, it doesnt have to be 50-50.
Also, remember these ingredients are to make two BiG portions, so you can split it in half or even a quarter to try it, see if you like it.

One thing: I'm always confused about heavy cream and half-and-half. I dont know precisely, but what I used has 30% fat. Is it heavy cream or half and half? Someone help me here pls 🤣😪
Also maybe you can replace it with whipping cream if you want.**

Instructions


First, crush the crackers and put them on a layer, on the buttom of your container. I always use a glass casserole or ceramic.

This is the very easy option out there. If you want, you can add melted butter and press it very well, but I prefer not to because its already too "cheesy". Its not low in calories, mind u! 😁🍓

Next, prepare the fluffy and creamy cheese mixture.

Add all the cheeses in a bowl (heavy cream, cream cheese and mascarpone), add powdered sugar and mix well with a hand mixer.

The cream must stay hard and not being runny, but in the same time it has to have a creamy fluffy texture.
Add powdered sugar if you consider its not sweet enough.

After digestive biscuits, next layer will be the fruits. Add berries.

Now add a generous portion of the cream, spread it evenly.

All right, we've got to lady fingers.

Look, this is totally optional. If you dont have lady fingers, its not really necessarry to use them. You can add another layer of crackers and thats it.

I mostly added these too because I wanted to use the juice left from the berries...
Thats why I called this recipe a Tiramisu/Cheesecake sort of dessert.

Its because of the lady fingers.
So, if you still decide going with these, soak them in the juice and add a single layer on top of cream mixture.

Add another layer of cream and start with decorations.
Add fruits, crushed biscuits, coconut flakes, candles...😅 or whatever you feel will do.

You'll see below in a few pics little hands decorating with such joy! I cant tell if he was more exited about this or eating his art work 😁🍓🫐🤔😝

Well, basically this is all.
It didnt take me more than half an hour to make it and plus if you split the recipe in half, its even faster.
I would say the recipe is for 10-14 portions.

Let's hope my post gives you a dessert idea 😁.
I would say its one type of dessert children love too, especially if they're in love with fruits.

Well, when you have little kids, you dont want to spend too much time in the kitchen. I dont live to spend all my time in there. I love to cook, dont get me wrong. Somedays I enjoy cooking all day and make 10 recipes at once 🤣🤣 but those are rare days.
And yet, I prefer cooking recipes we like, healthy recipes, easy recipes, not so complicated recipes.
I also read as many posts of yours I can. I always go to your page when I check my favorites list users ☺️

You love to cook from the way you do your cooking blogs. It's a pleasure to see great and inspiring photos and a relaxed way of presenting the recipe.
But our life is very full, beyond what we do, and want, others intervene. Partners, children, relatives, friends... and more. Obligations and needs. All this consumes our time.
Before, when I went to work, I hated Mondays, because the weekend was never enough, even if I didn't do much. Now the same thing happens when evening comes. I don't like it at all when the day ends... Maybe it's normal to be like that, considering my age. The clock goes tick-tack, (not tick-tock!).
It's also obvious that you have a good life and that you're happy with the way you live.
That's the best and I wish you to keep it that way until the end.

I love to cook if the day isnt to stresful or something ♥️♥️. However, its hard to make new recipes and its a struggle both in attention and time. When making new recipes, its harder.
Sometimes its just what I need, spending time in the kitchen.

Biscuit snacks is my best, actually actually love taking snacks like biscuit,sweets, chewing gum, Pringles and the rest of them.....I actually love it😰

The process seems so similar to Mango Float, a famous desset in the Philippines using condensed milk, cream, mangoes and biscuits. I’m curious about this, and I think I haven’t tried mascarpone cheese in my life (I guess?) so I’ll probably try out this recipe when I have extra strawberries at home. 😉 Because it just looks so delicious!! 🤤
