Easy Quick Dinner Recipe - Ground Beef Stuffed French Bread

Had a pantry full of leftovers and items that needed to be used, so put this recipe together - the boys thought it was delicious and it was very fast!

The run-down of ingredients...

1lb ground beef
onion
garlic
bag of spinach
sliced mozzarella
can of diced tomatoes
seasonings
herbs

Start by sauteing the diced onion in olive oil, then add the ground beef...

I like to grate the garlic cloves instead of chopped...

Make sure to add seasonings - I did salt, pepper, and red pepper flakes. After the meat is cooked through, add the can of tomatoes and cook for a few minutes.

Add the spinach in big handfuls and stir in...

...don't worry, it wilts down to not very much!

While it is cooking, cut off the very top of the bread and pull out the insides. I save and freeze it to make bread crumbs later.

At the end of the cooking I like to add fresh herbs from my garden - oregano and thyme

Take a layer of the sliced mozzarella and place on the first layer of bread. Then fill the bread will the meat filling...

Doesn't that look delicious already, and it's not even finished!

Finish with the last of the mozzarella on top and place on baking sheet in a hot oven until the cheese is melted and the bread starts to get crusty.

Wow, that looks delicious, going to make this instead of burgers when I some ground beef

Found it much easier than burgers and just as crowd-pleasing!

Also, could easily use any other ground meat and change it up!
