Happy Sunday everyone!
I hope you had a great weekend so far! After some very cloudy days, it is finally sunny and warm again and we just came back from an amazing vegan lunch buffet!
Today I'd like to share one of my favourite curry recipes with you. This one is super simple and you need only a few ingedrients to make it.

Ingredients
- 1 onion
- 2 cloves of garlic
- 200 g green beans (fresh or frozen)
- 1-2 handful of unsalted peanuts
- 2-3 tbsp peanut butter (unsweetened)
- 400 g (or 1 can) of diced tomatoes
- 3-4 tbsp tomato puree
- 1 cup of water
- 1 tsp garam masala spice (powder or paste)
- dash of salt ( to taste)
Instructions
- Peel and chop onion and garlic.
- Heat up some water in a pan or wok and sautee diced onion and garlic for around 5 minutes.
- Add the diced tomatoes, tomato puree ans spices and cook for around 5 more minutes.
- Chop the peanuts and add them together with the peanut butter.
- Wash the beans, cut them into 3 cm long pieces and add them to the wok.
- Fill up with some water of needed and cook for another 10 minutes.
- Add salt to taste.

Thank you :) Luckily it has been very sunny the last couple of days, but at the moment it is raining again and it's quite chilly - I'm wearing a SWEATER :-O
That's scary, I don't even own a sweater any more 🙈 So it has to sunny up till August, I might want to include that in my daily affirmations 😁
