Sweet Potato Pie - Homemade

in #food6 years ago (edited)

I am not a big dessert eater, but every now and then I want to cook something sweet. For dinner, I roasted a duck, prepared fresh beets, and fresh green beans.

For dessert, I made a sweet potato pie and at the last minute, I added a few pecans drizzled with maple syrup.

I baked 3 sweet potatoes in the oven until they were tender and starting to produce a syrup.

I used my electric mixer because it is handy, but it is not a necessary tool for this pie.

The other ingredients are brown sugar, white sugar, butter, cream, eggs, cinnamon, nutmeg, and vanilla extract.

All ingredients are mixed together and then poured into an unbaked pie crust.

While my pies were in the oven baking at 375 degrees F, I decided to add pecans to them after about 20 minutes. I was looking at several recipes on Google for sweet potato pies and one included maple syrup drizzled pecans as a topping.

Since the pies were already baking, I didn’t bother to make the pecans “pretty” on the surface. 😊

The pies turned out great! They aren’t restaurant quality or staged for a photo shoot worthy of a cookbook, but they are perfect for dinner.

Bon Appetit!
