Good morning my friends and happy and healthy weekend, today we will try cook something delicious and to say the truth this was the first time I try this way of cooking octopus and I will try it again surely soon . Let’s begin our cooking session

Ingredients

1 octopus about 1½ kg, fresh or frozen
2 kilos of small onions for stew, cleaned
1/2 cup teaspoon olive oil
1/2 cup of red tea, dry wine
1/2 cup tea red sweet wine
3 tablespoons soup red wine vinegar (preferably aged)
2 bay leaves
6 - 7 spice grains
2 large pieces of orange peel (remove with a teaspoon as much as possible the white inside which is bitter)
3-4 sprigs of fresh thyme (or 1 teaspoon of dried dessert)
salt, freshly ground pepper

Preparation

Frozen octopuses usually do not need to be cleaned. If we buy fresh, we clean it as follows: With a sharp knife we ​​cut the hood and separate it from the tentacles. Turn it over and clean it from the entrails.

With one hand we press the hard point at the junction of the tentacles and with the other we pull it from above to come out. Wash the octopus thoroughly in a basin of water, taking care to rinse its suction cups very well, because they collect sand. Cut the tentacles and the hood of the octopus into large pieces 4 - 5 cm long.

In a deep saucepan put the ingredients in the following order: a layer of onions, on top the pieces of octopus, the remaining onions, orange peel, spices and thyme. Pour over the olive oil, the wines and the vinegar. Do not add more liquids, as the octopus will produce its own.

Cover the pot and let the food simmer on low heat for about 1 hour and 15 minutes at least or until the octopus is done, without stirring, so as not to dissolve the onions. If at the end of cooking there is enough liquid left in the pot, strain the solids and boil until the sauce reaches the desired density.

Serve, accompanied, if desired, with boiled or fried potatoes.
