Insanely Easy Sheet Pan Dinner

Aw, sheet pan dinners, where have you been all my life? If you haven’t heard of them before you are missing out big time. I think it was about a year ago that I first heard about insanely easy dinners that could be made all on one pan. Doesn’t that sound incredible!

You don’t have to be a chef or even that good of a cook to prepare it either. Just put everything on a sheet pan, and I mean everything, bake it all together and voila – you’ve got a complete dinner with hardly any fuss.   

And I know that most of you, after a long day, don’t even want to think about getting dinner on the table. Well, you’ll really appreciate the ease of preparation and the almost non-existent cleanup. Of course, knowing that they’re delicious too doesn’t hurt either.   

Today’s sheet pan dinner features crispy chicken, fresh cherry tomatoes and broccoli and some frozen steak fries. Of course, to make it a little tastier, I added some Parmesan cheese too - ‘cause cheese just makes everything better. 😊

Start by cutting the tomatoes in half and the broccoli into small florets. 

Mix the oil, Italian seasoning and Parmesan cheese together and toss the vegetables in it. Place them on the sheet pan.

Now crush the crackers into crumbs. I used an Italian and sea salt seasoned cracker but any crispy salty cracker will work.

Mix the cracker crumbs with Parmesan cheese either in a wide bowl or a large flat plate. Set aside.

Next, mix olive oil and Italian seasoning in a wide bowl. Cut the chicken breasts in half lengthwise to make them a little thinner.

Dip the chicken in the oil mixture then into the bread crumbs. Pat the bread crumbs in place.

Place on sheet pan with the vegetables. Here you can sprinkle with a little more parmesan if you just can’t get enough cheese. Just sayin’!

Add the potatoes to the sheet pan.

Ready to bake.

Bake for 40 minutes. The aromas alone will get your mouth watering. Remove from the oven and set on a wire rack.

Just look at that crispy, crunchy chicken.

Plate it, take a bite and you’ll be hooked! Enjoy!

CRISPY CHICKEN SHEET PAN DINNER

Prep: 20 minutes Cook: 40 minutes Total Time: 1 hour

Ingredients:

  • 1 pint cherry tomatoes, halved
  • 1 head broccoli, cut into florets
  • 3 chicken breasts, halved lengthwise
  • 2 cups cracker crumbs
  • 1/4-1/2 cup Parmesan or Pecorino Romano cheese, grated
  • 1 15-oz package steak fries

Vegetable Seasoning

  • 3 Tablespoons olive oil
  • 1 Tablespoon Italian seasoning
  • 1/2 teaspoon minced garlic
  • 1/4 cup Parmesan or Pecorino Romano cheese, grated

 Chicken Seasoning

  • 3 Tablespoons olive oil
  • 1 Tablespoon Italian Seasoning
  • 1/2 teaspoon minced garlic

Directions:

  1. Preheat oven to 425 degrees. Spray 1-2 large sheet pans, cookie sheets with rims, with a non-stick spray or line with parchment paper.
  2. Cut vegetables.
  3. Mix all ingredients for vegetable seasonings. Toss vegetables in mixtures and lay on sheet pan.
  4. Cut chicken in half lengthwise to make it thinner.
  5. Crush crackers well and mix with Parmesan cheese in a large bowl or on a flat plate.
  6. Mix chicken seasoning together in a wide bowl and set aside.
  7. Dip chicken into chicken seasoning mixture then into cracker-cheese mixture. Pat crumbs on to chicken and place on sheet pan. Make sure all ingredients are laying flat on the pan and nothing is overlapping.
  8. Place frozen potatoes around chicken and vegetables.
  9. Bake in oven for 40 minutes.
  10. Remove from oven and serve.

Serves 4-6.

It looks amazing, and I bet it tastes so too! I love using parmesan when cooking as the cheese is a unique flavor. Kudos to the ziplock bag and rolling pin on the crackers, definitely solves the mess factor. I followed you, looking forward to your future delicious entrees c:

Thanks so much! This is one of our favorite dinners to fix. And I don't know what I would do without ziplock bags. They're great for pounding chicken into cutlets, marinating meats, crushing Oreos for a chocolate cookie crust, in fact, I use them for almost anything just to cut down on dishes to wash. I feel ya, I think it's actually insane not to have them, would save me lots of time and effort. I wish I had an oven now because pan sheet dinners look amazing, probably going to borrow a friend's kitchen coming up c:

You could easily use a toasted quinoa in place of the cracker crumbs and leave out the potatoes for a better low carb option. Glad you liked the post. Thanks for stopping by.
