Cookies with Cherry Jam!

We are in that season of the year in which we can taste this wonderful fruit, the cherry, the patio of my house is full of them and I came up with the idea of preparing a delicious jam of cherries accompanied by some crispy butter cookies, nothing better for those rainy afternoons where going out is not an option. Keep reading so you can learn how to make this recipe.

INGREDIENTS:
Cherries
Sugar
Lemon

PROCESS:

  • Wash the cherries very well, remove the stem.

  • In a pot place 2 cup of cherries next to 1 cup of sugar and the juice of a lemon, cook for half an hour over low heat until forming a syrup.

  • Let cool for about 5 minutes, then blend until everything is mixed and without lumps.

INGREDIENTS:
2 cup wheat flour
½ cup of sugar
1 egg
3 tablespoons of butter
1 teaspoon baking powder
1 teaspoon lemon juice

PROCEDURE:

  • Mix the sugar with the butter at room temperature to form a cream. Add the egg and the lemon juice, keep mixing until the ingredients are incorporated.

  • Add the wheat flour in two parts along with the baking powder. At this point a consistent dough will form. Let sit in the refrigerator for about 30 minutes

  • After the time, stretch the dough with a rolling pin in a previously floured counter.

  • With a cookie cutter give shape, I chose one at heart.

  • Cooking in a preheated oven at 180º for 10 minutes, you must be very careful not to burn them
