Vegan Cocoa Bundt Cake With Chocolate Glaze

This cake is kind of special to me, as I like it's shape, chocolatey flavour with a little bit of a bitter taste of cocoa powder and spiced up with cinnamon.
I used a very old clay mould for baking, that was in my family for a long time. It's a bit crushed now on the edge, but it's still good for baking.

I had a birthday yesterday and I made a cake for me and my friend who also had a birthday yesterday and we celebrated with some cake and coffee.
So this time I actually made a cake with a reason. 😃

That's a photo of me and my sister from 26 years ago, when we celebrated my second birthday and we had cake! 😍

Besides kitchen work, I remember I always loved chocolate.
I think everyone loves chocolate and this cake is just perfect for every chocolate lover.

Vegan Cocoa Bundt Cake With Chocolate Glaze

Ingredients for the crust:

  • 340 g of spelt flour
  • 80 g of sugar
  • 55 g of cocoa powder
  • ½ teaspoon of cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 flax eggs
  • 80 ml of canola oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 cup of oat milk

Ingredients for the chocolate glaze:

  • 100 ml of water
  • 100 ml of oat milk
  • 2 teaspoons of agar agar powder
  • 200 g of vegan chocolate

Preparation:

  1. Prepare flax eggs; mix 2 tablespoons of ground flaxseeds and 5 tablespoons of water. Set aside for a few minutes, to get slimy.
  2. Sift all dry ingredients through a sieve in a bowl and mix them well.
  3. Mix wet ingredients; flax eggs, oil, vanilla, vinegar and oat milk.
  4. Add wet ingredients to dry ingredients until it's all corporated, but don't ovemix.
  5. Grease the baking tray and pour the batter in. If you're using a clay mould, heat it up first in the oven.

  6. Put it in a preheated oven at 190°C and bake for 30-40 minutes. Cool down the crust before covering with chocolate.

  7. Cut the chocolate into pieces.
  8. In a small pot, mix together water and oat milk and bring it to boil. Add 2 tablespoons of agar agar and simmer for 2 minutes while slowly mixing.
  9. Take the pot off the heat and add chocolate to it. Slowly mix to help the chocolate melt. If there are still chunks of chocolate put it in a double boiler and heat while mixing.
  10. Pour through a strainer in another pot to get rid of the air bubbles.
  11. Pour chocolate mixture over the cake to completely cover it.
