It is a great day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our full time volunteers on our indoor wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen. We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!
We made a Mexican fiesta with Mexican lasagna, sautéed peppers and onions, taco salad, frittata, purple Thai sticky rice, black beans, and chips and guac!
We had lots of hearty food today, with more food than anyone could eat!
We started with a beautiful healthy salad. We used tender lettuces and topped them with red onion, peppers, broccoli, red cabbage, and crunchy tortilla strips for extra texture and flavor!
We made a skillet of colorful bell peppers sautéed with onions and mushrooms. This has lots of vitamin C, vitamin D, fiber, and antimicrobial compounds for super wellness and tons of yumminess!
We made purple Thai sticky rice on the side. Rice is a classic side dish for Tex-Mex cuisine, but it is usually made with a variety of white rice. This has an interesting color and is not as fluffy as white rice - it is almost more like a sushi rice! There are literally tens of thousands of varieties of rice; it is the seed of a species of grass.
For a main dish, we made a delicious frittata with fresh eggs from our chickens beat with onions, garlic, peppers, mushrooms, tomatoes, and lots of dank cheeses including cheddar, pepper jack, and monterey jack and cooked until fluffy and firm. Then we topped it with spicy salsa for more great color and taste!
We made black beans on the side cooked with flavorful garlic, onions, cumin, and chili powder. A sprinkling of green onions looks beautiful against the dark, creamy beans!
We served crunchy tortilla chips for garnish and dipping.
There was lots of guac on the side! This is a favorite dish around here. It has creamy avocados mashed with garlic, onions, tomatoes, lime juice, and a dash of cumin for some smokey spiciness.
For another yummy main dish for the meat eaters, we made Mexican lasagna! This is a fantastic casserole made from layered corn tortillas, cheddar cheese, green chile salsa, shredded chicken, and lots of onions and spices. We cook it over the stove top until it is hot and bubbly!
We served several fun sprinkles and condiments for each person to dress up their plate. We offered shredded cheese, green chile salsa, and spicy tomato salsa for full customization.
Tex-Mex is one of our favorite comfort foods! There is lots of gooey melty cheese, and hearty wholesome rice and beans, plus fresh salad and sautéed veggies. We hope you enjoyed sharing our feast with us today!

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!

Mmmm how delicious are all the dishes that prepare today @gardenofeden, recipes to the Mexican fantastic. Mexico is considered a good country for its good gastronomy and today you have brought us a piece of Mexico with your preparations. I love how that Mexican lasagna looks and the potatoes with guacamole look exquisite too, I love the guacamole, I am one of those who think that the avocado has a spectacular flavor.
