Hi guys, in this post I am going to share with you the steps in preparing traditional Chinese steam bun aka (Mantou). The preparation is very easy and there are six basic ingredients which are:
- 300gm Bread flour
- 150ml milk
- 1 tea spoon instant dry yeast
- 1 tea spoon baking powder (optional)
- 2 table spoon sugar
- 1 tea spoon salt
- 2 table spoon vegetable oil
- baking paper (optional)
Step 1
Pour the 15ml warm water into a cup together with the sugar, salt, and yeast. Stir well and let it rest for 15 minutes. After that, there will be bubble on top of the milk. Then mix the flour together with the milk mixture roughly for 15 minutes. Remember to pour the milk in batches to avoid too wet when mixing the flour.
Step 2
After mixing all the ingredient together, make it into a ball and let it rest on a bowl for proofing. Remember to cover with a plastic wrap or a wet cloth to prevent dust. As I am living in Malaysia with tropical climate, the dough with ride in 45 minutes to 1 hour. The dough is ready when it double the size as shown above.
Step 3
Knead the dough for 10 to 15 minutes before shaping it into bun shape. Then put the buns on top of baking papers to avoid sticking when we cook them. Before steaming, let the dough rest for another 30 minutes for 2nd proofing. The final process is steam it using a steamer or a wok for 15 minutes then they are ready to be served.
One cooked bun will weight around 70gm and as you can see, the bun has a very fluffy texture and we can eat it empty or we can spread some butter or jam. Enjoy!!
