This was yet another leftover-inspired meal. We had some leftover unseasoned sauteed onions and orange/green peppers. In the freezer, I also found a small number of mushrooms and two drumsticks that got lost at the bottom of the freezer. The sweet potato had been languishing since before Christmas. This is what I had on hand, because, with all the empty shelves we have in the grocery stores, I cannot throw anything out. It would almost be a crime, and who doesn't like to get a little creative with their leftovers?

The chicken was found at the bottom of the freezer in a poor sealing snack bag. Clearly, it had not been intended for an extended stay in the freezer. After defrosting it was deboned and the many tendons were removed. It was cooked on the George Foreman Grill and then cut into bite-sized pieces.
The sweet potato was the only one left from a bag of freshly dug up, from a friend passing through from Georgia. It was a big bag, make no mistake. This was between Thanksgiving and Christmas It was starting to look a little dry, so I decided to add it in. Not even baking it in the oven could bring out the sugars in it, but the sweetness from the teriyaki sauce turned the dry shriveling thing into a delicious addition.
There were onions and peppers that had seen their first found in fajitas earlier in the week, but, and not crispy like I would have made them fresh. They had been left unseasoned, in anticipation of using in other dishes. I didn't want Mexican in my (not Mexican) leftovers.
The canned pineapple chunks contain just enough pineapple juice for one sweet, refreshing cup. The broccoli was freshly steamed. All of that was placed over a bed of rice with some teriyaki sauce poured over. It was actually tasty and there are no more leftovers to finish! Success!
I did a nice ending with some Wigle Whiskey Landlocked Spiced Rum; it finished off the pineapple juice from dinner, then added a bit of the spiced rum and a splash of grenadine. Yummy! It is time to make a run for the distillery! You know the price is right!
We got our snow furries, which probably was less than a hundred flakes, it even melted off the sidewalks. I suppose I should be grateful as the rest of the country getting snowed in, but, I still haven't got enough to build a snowman. No snow, but, there is always a flower that I can count on. #alwaysaflower
All I have are my words, armed in my mind, written in pen, stand by stand. Oh, yes. Still by hand. It has a different feel. Altered not by keys, backspace, and delete, I write, erase, tear it to pieces and start all over again. And again.

I currently do not know anything about Mexican foods, but I would often be happy for anything. Your leftovers look better than the food I usually, but this is obvious, because I live under the local minimum wage in Hungary, and I cannot afford normal/proper quality food most of the time.
Usually I buy discounted food, which is close to expiration. They often have a discount between 30% and 70%. Sometimes even more. This is probably the same (or very similar) in the USA too, and probably the poor people there also look for these discounts.
People with proper incomes obviously does not have to look for these discounts.

Honestly, almost every store has a discount section or quick sale items. That is common in most places here, and it is not usually so far gone that I wouldn't eat it. I worked with the homeless shelter for a few years and when people ask what they can donate, I always told them: Only donate things that you would wear in public and food you would serve your family.

It is ironic, but my best meals ( the ones I consider the most tasty) have been made with leftover, from scratch. It is maybe because we get more inventive or simply because we are not expecting for the best results, and then we have wonderful meals. That dish looks delicious !
Haha! I think you are right! It is the thought of not wasting food and thinking I am doing a good thing using the leftovers, and then I have no expectations, so when it comes out delicious, I cannot help but smile!

That's a good use of leftovers right there. Its looks quite good. The drink sounds good as well. Very tropical. I don't drink rum very often but I would give that a go.
I also take rum once in a while but I prefer bear or natural fruits drinks @leaky20
I don't either, but, it sure does taste good once in a while. I wanted to use up the pineapple juice up, instead of tossing it out with the can. Oh, my! Am I getting pathetic? Trying to use up all the little scraps I find around here. :)

The leftover dish looks like yummy. Fresh broccoli provided that fresh green colour you would otherwise lack. Pineapple juice was the one I would never think to add in a mixed bowl like this. I should definitely think adding them next time in my leftover bowl. A healthy option none the less.
That is awesome that you think that. I love fresh broccoli and it really does punch up the color. I like to mix different tastes, but, I have to admit, I make some terrible mistakes, but, for the most part, it is not too bad. Thanks for stopping by and leaving your words.
