Healthy Treats | Thanking My Lucky Stars and Strawberry Cream Bites!

Hola my friends! The Hive is certainly alive and buzzing with activity!


Where do I begin….


Our witnesses have certainly been busy bees! The Hive was born!
The Birds have been absent for a while but we’ve been watching from our nest! It’s been quite an interesting ride hasn’t it? I’m so proud and thankful for our witnesses. Being married to a network manager and developer, I know only too well the blood, sweat and tears it takes to accomplish what our witness have done. They worked so hard to protect our community, the meetings, negotiations and I’m sure very late nights preparing for the hard fork. Everything seemed to go off without a hitch! Such a blessing!


The Bird family is on the move…


Our youngest daughter and her family will be moving to South Carolina! This is so exciting for us. We’ll be able to drive to visit them. Needless to say we are thrilled. They’ll arrive tomorrow and oh the adventures we will have. We’re certainly thanking our lucky stars!

Coronavirus and family time…


The coronavirus has many of under lockdown! I know many of us across the world are enjoying family time right now! School has been dismissed for many and some schools will be closed until fall. Trying to keep kids both big and small stimulated can be tough. Some of our best times as a family have been found in the kitchen! Does it have to be complicated? No! Will it be messy? Yes! But will they learn anything? Yes! The memories you will make will last a life time!


Join me! I’ll show you how!


Of course we’re making chocolate! Lol I’m sure you’ve missed my chocolate treats. Using just 4 ingredients we will make little chocolate delights your family will love!


Strawberry Cream Cheese Bites

  • Kite Hill Cream Cheese (1/2 cup)
  • Fresh Strawberries (3/4 cup)
  • Vanilla (1 tsp)
  • Dark Chocolate Chips (1/2 cup)

Grab those measuring cups…


Along with the fresh strawberries! Any fruit will work, blueberries, blackberries, bananas; it’s all good!

Take a little time…


to show the little ones how to scoop and measure! Counting and measuring, washing and chopping the strawberries while taking time to taste just a few! Blend everything in your favorite blender until it smooth.

Not to forget...


the chocolate! Carefully melt the chocolate using a double boiler or microwave. Grab your favorite silicone molds and spoon the chocolate into the mold. Don’t have molds? That’s okay! Ice cube trays, paper, muffin tins will work too. Refrigerate or freeze until the chocolate is solid.

Filled with cream…


they were back into the freezer for about 30 minutes. Finally topped with a chocolate seal they were back into the freezer, ready for family!

Back to those lucky stars…


With chocolate left over I decided to make bite size treats for the little guy. We’re so lucky to have them with us for the next month or so. He does love his chocolate, lol. With a smile on my face I poured the remaining chocolate, raisins and goji berries into my silicone mold. (Yep,this Bird is messy!) In short order they joined the strawberry bites in the freezer.

It’s so simple!


Making quick and easy treats with your family will be fun as well as healthy! Some of my fondest memories spent with my grandmother were in the kitchen. She taught me so much! I certainly didn’t realize it at the time but now looking back it was priceless!

I think these are so delicious looking, I especially love the ones with the goji berries and raisins! How yummy!

Where is South Carolina are they moving to?I lived there once upon a time and I will never forget the fields and fields of cotton and tobacco. No longer the tobacco so much, but, totally different than my New England upbringing!

So different and yet part of our same United States. I found that funny and the more I moved, the more I found it.

Anyway, I am happy you will be much closer than you were and I hopefully this will be an exciting time for the kids!They always take it the hardest!

Hello my friend! They will be moving near Columbia. We are all absolutly excited to have one another within driving distance. 29 hours was just too far away! Needless to say they didn't look back when they left Denver as they had a foot of snow right before they left,😂 I pray you and your family are all healthy, hand washing and proper social distancing is the key. Yes, no question. They have also have a clear profit motive, as they have considerably more to gain than most, in getting the Hive blockchain up and running. Not saying that is bad, just that it is seldom mentioned …

Yes, again, no question. Families are having to “rediscover” each other. Overall, that should be a good thing! 😉 Nice to see your daughter’s recent move will result in you being within (wasn’t before?) driving distance. We are facing the opposite. Our nearby daughter and her family (two of our grandchildren) are likely moving and far away …

You're so correct, these times are indeed difficult but I truly believe rediscovering connections with family and loved ones will hopefully be a positive outcome 😃 I know the witness do have much to gain from their hard work but having a spouse who was immersed in the business for many many years, I have a certain impathy for the career. So sorry to hear your daughter is moving further away. This daughter lived 29 hours away, too far for an easy drive. Now it will be about 9 hours, much easier to stay in touch! On this side of the planet, I have dedicated myself, in my spare time, to preparing some cakes. I live in the country, so there is no risk of COVID19. Nearby cities are still isolated and my work does not stop :)

I admire you, always wanted to bake something with the children but it is not my second nature, so I always delay it. And only do activities like playing and reading with them. Certainly love this so much. Especially the lucky stars. Pray that this crisis will be over soon and all of us are healthy.

Playing and reading are favorites of mine as well! Can't do enough of that my friend. I'm praying this will soon pass...stay safe and healthy and enjoy that time with the children 😃

Wonderful post, @birdsinparadise. And the recipe looks delicious! We have also been cooking, baking, hanging out together and playing games. Being together and enjoying one another's company is a great way to handle the isolation!

Yes, this is a great opportunity to bond with family, do fun and relaxing things at home and play games. We have been doing the same, and I think I will look back and really cherish the time we had!
