North Indian Carrot & Sago Kheer

    What to make with the ingredients some weeks really has me stumped, but then I'm not a Vegan chef, only try going plantbased at least once a week for my family!

The only pairing I could see work was a Sago Pud combined with Carrots, but I had never tried that before.

Lo and behold, when I turned to granny Google for advice, there it was; a North Indian Sugar Free Dessert called Carrot & Sago Kheer by Spoon and Fork.

I had to adapt it as they used dairy milk and I could not get all of the ingredients but the end result was a real treat plus it was quite easy to put together.

My sweet tooth needed a bit more sweetening so I cheated with my serving by sprinkling a little brown sugar & cinnamon powder on top, which made it even more yum!
I know...I know...sugar is bad for one, but hey, a gal needs to be naughty at times not so;)

Sago Pudding is very popular here in South Africa, but it's a light and fluffy one with the addition of eggs, so adding carrots was a whole new ball game for me.

The fact that hubby is a type 1 diabetic made this idea even more appealing, as I'm always on the lookout for a treat that he can also enjoy.

Plantbased Carrot & Sago Pudding / Kheer (Sugar-Free)

Ingredients

  • 1 cup young sweet Carrots - grated
  • 1 Tbsp Canola Oil
  • 1 tsp Vegan Butter
  • 2 cups Almond Milk
  • 4 whole Elachi / Cardamon pods
  • 1 stick Cinnamon or Cassia
  • 3/4 cup Sago - soak in water for approx 1 hour, then drain
  • 100 ml broken Almonds
  • Handful Pistachio Nuts, diced
  • Handful Slivered Almonds - coloured

Sautee Carrots in oil and vegan butter mix till not raw any longer
Add milk and spice and bring to the boil

Add Sago and stir over low heat till sago starts to become translucent and milk thickens, add broken Almonds towards the end.

Dessert ready to be dished up and presented by adding Pistachio, Slivered Almonds as well as Rose Petals.

This is really an interesting combination carrot with sago to make a pudding. We didn't consume sago too much but it makes really delicious pudding and savory recipes.
Amazing recipe and photography as usual!

Thank you @chetanpadliya, I was really delighted with the outcome, changed the original recipe quite a bit. It called for Saffron and powdered Elachi which I didn't have, plus they used dairy products. One definitely has to use young sweet carrots though for sweetening.

You know I'm a sucker for anything with South Asian flavors, but I really love a good homemade kheer, especially because it's nearly impossible to find a non-dairy one at an Indian restaurant. You even went all out with the pistachios and slivered almonds. Thanks for sharing chef!

The original recipe actually asked for full cream milk, so I looked at the Coconut Milk or Almond Milk and chose the latter. I'd like to try it with Coconut milk next time as I can imagine that would be a good pairing! I was quite amazed at how the orange colour from the carrots came through so strongly. I'm so glad you enjoyed it;)

It was very good, there was a small helping leftover and the Sago had swelled even more, so it was almost like a jelly when cold! Nice change to our regular sago Pudding. Thanks for popping in @rem-steem 😊

Now you know I don't touch sago, however my verdict is that looks pretty good, I do enjoy Almond Milk another good go to avoid dairy.

Well done perhaps one day I may face sago again.... 😁

It's thanks to the challenge by @justinparke! I could only see something with those 2 ingredients working and then found the recipe on Google although I had to adapt it. It was very good indeed, I really love sago😋

LOL granny Google certainly is a wealth of knowledge. So often when I can't find a particular recipe book, I always find the recipe online.

I have never heard of kheer. Gosh I love to learn about different foods of the world especially if they are veganized. What a heavenly dish. I love look of it as well!

I also learn something new here with all these challenges my friend! I really want to see how it works with Coconut milk or cream.
