
Ya me veo volviendo a un periodo de descanso de las harinas y el azúcar, porque este corazón dulce no se aguanta y ha hecho varias recetas que ya me dejan en deuda con la buena alimentación.
Entre los placeres culposos de estos días dulces estuvieron presentes los golfeados, los cuales preparé por primera vez; para esto usé como base la receta de cookasmarvic en Instagram.
Hice algunos cambios en el paso a paso de esta receta y no añadí miel, pues no tengo, y bajé las cantidades de los ingredientes para preparar el "melao" de papelón.
Esta es una receta que ocupa diversos ingredientes y también tiempo y dedicación; bien vale el esfuerzo de principio a fin.
I can already see myself going back to a break from flour and sugar, because this sweet tooth just can’t resist and has made several recipes that already have me falling behind on healthy eating.
Among the guilty pleasures of these sweet days were the “golfeados,” which I made for the first time; for this, I used cookasmarvic’s recipe on Instagram as a base.
I made a few changes to the step-by-step instructions and didn’t add honey—since I didn’t have any—and I reduced the amounts of the ingredients for the brown sugar syrup.
This recipe calls for a variety of ingredients, as well as time and dedication; it’s well worth the effort from start to finish.
Ingredientes (Ingredients)
- 400 g de harina de trigo.
- 154 g de leche tibia.
- 72 g de azúcar blanca.
- 36 g de papelón rallado.
- 56 g de mantequilla derretida.
- 7 g de levadura seca.
- 1/2 cucharadita de anís dulce.
- 1 huevo.
Relleno
- 100 g de queso blanco.
- 100 g de papelón.
- Clavos de olor y canela al gusto.
Melao de papelón
- 50 g de papelón.
- 50 g de agua.
- 400 g wheat flour.
- 154 g warm milk.
- 72 g white sugar.
- 36 g grated brown sugar.
- 56 g melted butter.
- 7 g dry yeast.
- 1/2 teaspoon anise.
- 1 egg.
Filling
- 100 g white cheese.
- 100 g brown sugar.
- Cloves and cinnamon to taste.
Brown Sugar Syrup
- 50 g brown sugar.
- 50 g water.
Preparación (How to make it)
- Activo la levadura con el agua tibia, un par de cucharadas de harina y azúcar. La dejo reposar hasta que se forma una esponja. Sé que lo común es colocar la levadura directamente, pero me gusta hacer este paso previo para tener la seguridad al 100% de que la levadura está buena.
I activate the yeast with warm water, a couple of tablespoons of flour, and sugar. I let it sit until a foam forms. I know it’s common to add the yeast directly, but I like to do this preliminary step to be 100% sure the yeast is good.

- Colocar los ingredientes en el bol de la batidora.
Place the ingredients in the mixer bowl.

- Amasar hasta activar el gluten. Estira la masa y debe estirarse quedando traslúcida. Reposar hasta que la masa crezca.
Knead until the gluten is activated. Stretch the dough until it becomes translucent. Let it rest until it rises.

- Estirar la masa, agregar el relleno y enrollar.
Roll out the dough, add the filling, and roll it up.


- Cortar el rollo de masa rellena y dejar reposar hasta que crezcan los golfeados. No te doy un tiempo exacto de levado porque en este crecimiento pueden incidir factores como el clima.
Cut the roll of filled dough and let it rest until the golfeados rise. *I can't give you an exact rising time because factors such as the weather can affect this process.

- El melao de papelón, especie de sirope, se prepara colocando el agua y el papelón al fuego medio vaso hasta que reduzca un poco.
*Papelón molasses, a type of syrup, is made by placing water and papelón over medium heat for half a glass until it reduces slightly.

- Una vez que crezcan, llevar a horno precalentado a 180 grados centígrados. Colocar melao de papelón en el fondo de la bandeja donde has dispuesto los golfeados y hornear durante 40 minutos; recuerda que el tiempo de horneado dependerá de tu horno.
Once they've risen, place them in an oven preheated to 180 degrees Celsius. Spread some brown sugar syrup on the bottom of the baking sheet where you've arranged the golfeados, and bake for 40 minutes. Remember that the baking time will depend on your oven.

Te los puedes comer así solitos o con una rica lluvia de queso blanco rallado por encima.
You can eat them just as they are or with a generous sprinkling of grated white cheese on top.

When I read ‘papelón’, I wondered what it was and immediately looked it up on Google. I thought to myself at that moment: ‘How delicious golfeados must be, as I’ve never tried them.’ They look very much like those little rolls made from a dough that we call ‘80 golpes’ in Argentina, especially in terms of their shape. What you say about activating the yeast is true; the result is different and better, and the proving times will always depend on the ambient humidity where you live.

Si sabes hacer roles de canela y consigues papelón dónde vives vas a poder replicarlos. Hacerlos lleva trabajo pero bien lo vale, yo los voy preparando poco a poco para no cargarme con tanto trabajo.
