Vegan Popcorn with Caramel & Chocolate

It’s no secret to those who know me that I have an unhealthy relationship with popcorn–unhealthy in that I find myself giving in to popcorn cravings on a more-than-regular basis (think multiple times each week and sometimes more than once in a day), and then once I begin eating it, I don’t know when to stop.

Vegan popcorn with caramel and chocolate is a sweet and satisfying snack that's perfect for movie nights or parties. This version uses plant-based ingredients to create a rich caramel and decadent chocolate topping. The caramel is made with coconut oil and coconut sugar, giving it a distinct flavor, while the chocolate is a simple mixture of vegan chocolate and coconut oil. Here's a simple recipe for making vegan popcorn with caramel and chocolate.

Ingredients for the Popcorn:

  • 1/2 cup popcorn kernels
  • 2 tablespoons coconut oil (for popping)

  2. Make the Caramel: In a saucepan over medium heat, combine the coconut sugar, coconut oil, and maple syrup or agave syrup. Stir until the mixture is smooth and begins to bubble. Continue cooking for 2-3 minutes, then add the baking soda and a pinch of salt. Stir to combine, and remove from heat.

  3. Combine Popcorn and Caramel: Pour the caramel sauce over the popped popcorn and use a spatula to mix and coat the popcorn evenly. Work quickly, as the caramel will start to set as it cools.

  4. Prepare the Chocolate Drizzle: In a microwave-safe bowl, combine the vegan chocolate chips or chopped dark chocolate with the coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.

  5. Add the Chocolate Drizzle: Drizzle the melted chocolate over the caramel-coated popcorn. You can use a spoon or a piping bag for a more precise drizzle.

  6. Let It Set: Spread the popcorn onto a baking sheet lined with parchment paper and allow it to set for about 30 minutes. Once the caramel and chocolate have hardened, break the popcorn into clusters.
