This cuisine is a traditional food from South India. I usually prefer green banana as substitute to potato.
I did not peel the green banana, because it's so fresh, and green peelings also are rich in fiber. it will not affect the taste of curry. This is very easy to cook, and I learned it to my husband as he is native south Indian man.
We usually eat this with fermented rice or flat bread.
