Charcoal Grilled Chicken with Peanut Sauce

Hello Lovelies!

Even though there is snow still, wind is somewhat cold still, we just cannot wait to BBQ outside already 😁 Thanks to the sunny days we have been having. Morning still cold, but sun is strong and warm, at least until 4ish PM. Come eve drops to -5 C still. However, it feels like it is time for BBQ season, seriously πŸ˜„

True Canadians do grill outside even in -20ish, -30ish C, I learned, but we aren't true Canadians. Can't stand the freezing wind πŸ˜… Nose, cheek, toes, would just be too cold πŸ˜…πŸ˜…πŸ˜…πŸ˜…

So yep. Grilled some goodies, we did.

Chicken and eggplant to be exact. I marinated and coated them in peanut sauce. So good πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹

150 g roasted unsalted peanuts
Water as needed, enough to make a smooth sauce
3 candlenuts, no subs
3 bird eye chilies
5 shallots
5 garlic
3 tbsp Indonesian sweet soy sauce kecap manis
Brown sugar to taste, you want to achieve a sweet (and spicy) peanut sauce
Salt to taste

Process into smooth sauce, dump onto nonstick pan. Season with brown sugar, salt, sweet soy sauce, and cook until bubbly

1 - 1.5 kg chicken thighs and/or breast, boneless

Marinade chicken (and/or sliced eggplants) in the peanut sauce for 15 minutes

Grill until cooked (best using charcoal griller!), spraying the chicken/eggplant with oil spray, whenever you turn them to grill the other side.

Make sure chicken has clear juice and temperature is about 170 F!
