Classic Grandma Style Chicken Masala Recipe

Hello everyone! Today I am going to share a classic grandma chicken recipe with a lot of masala. It is a part of the Indian cuisine and therefore many spices and masala mixes are used. It will be great to be eaten during weekend when everyone can relax or during cold days. The following are the ingredients used for it.

Ingredients


  • Oil
  • Water
  • Salt to taste
  • Chicken - marinated with spices, turmeric and chilli powder (more details in the recipe below)
  • Cinnamon
  • Star anise
  • Onion
  • Shallots
  • Ginger garlic paste
  • Cloves
  • Cumin
  • Curry leaves
  • Green chillies
  • Tomatoes
  • Homemade ground chilli powder (I have described more in the recipe below)

Use a large pot if you can as it allows to mix the chicken well later on. Pour some oil into the pot and wait until it heats up. Then, add the star anise, cinnamon and cloves. Mix them all together.

When the aroma starts coming out, add some cumin.

Then, add both the onions and shallots. They must be chopped in prior. Use all shallots or half shallots and half onions.

Cut the green chillies in length and add them next. Remove some of the seeds if you like but not all because the seeds give some spicy taste.

Then, add the curry leaves. Becareful if you use a shallow pot as they can sometimes 'splash' with the hot oil.

Cut the tomatoes in prior into little pieces like this.

By the way, this is the pot we used. It is large and sturdy. The spatula is a food grade silicon one and it helps to mix the chicken gently without tearing the outer layers.

This how deep the pot is so there is no splashing of oils at all and I don't have to deal with little oil burns.

Add the tomatoes when you can no longer smell the raw taste of green chillies.

This is the marinated chicken. Some of the ingredients in it are chilli powder, chicken powder, cumin powder and coriander leaves. Click here to get the full ingredients list I have in my chicken marination tutorial video.

Add the marinated chicken and mix them all well. The chicken may feel a little stiff at first but it will start becoming tender.

This is how it looks after mixing. Chicken generally contains water so there may be a small amount of gravy formed.

Cover the pot with a lid and let it cook for a minute.

In the meantime, fill the basin or container where you marinated the chicken earlier, with some waters to utilize all the leftover spices.

This is right after removing the lid. It was hot and smokey.

Add the water into the chicken and mix all the ingredients.

Add salt to your taste, keeping in mind that some salt have already been added in the chicken marination earlier.

Add some homemade ground chilli powder made of dried chilli, cumin, cinnamon, cloves and coriander. They need to be roasted first before powdered. Alternatively, you can just use regular chicken curry powder.

Mix everything well and wait until the oil starts surfacing.

Put the lid on for a while and then remove it after a minute. Depending on your preference on how much gravy you would like, feel free to add more water and repeat the step. Check if the oil has come out on top like this. That is the indication that the dish is ready.
