Hello everyone! Today I am going to share about our little celebration of Mothers Day. My family and I didn't do much but we had a yummy meal for lunch. Our lunch was rice with green chicken and fried mixed vegetables. It was a delightful, filling meal.
I wasn't able to take many pictures of the preparation of chicken as I was occupied, so I won't be posting full recipe. I will describe briefly on how to prepare it. We call it the green chicken because it looks greenish instead of the typical reddish curry chicken. That is because it is made using some leafy ingredients.
The chicken has to be marinated in prior.
Check out all the beautiful warm spices! The spices used are chilli powder, chicken curry powder, coriander powder, garam masala, cumin and some salt. You can add your own choice of spices too if you like so you can tailor the ingredients to your liking. The blend of these spices give the chicken a wonderful flavour and cut down on the raw taste.
These are ginger and garlic. They need to be pounded using a pestle and mortar.
Add some of the ginger garlic paste into the chicken marination as well.
Then, using your hands, massage the chicken so all the spices and ginger garlic paste blend into each other and flavour the entire chicken. Let it marinate while the other parts of the cooking is done.
This is the rest of the ginger garlic paste which will be added into the green chicken gravy cooking.
The cooking is quite similar to regular chicken with thick curry gravy. The extra ingredients used are coriander leaves and pudina leaves. Pudina is garden mint. These two items are where the green colour is derived from. In prior to the cooking process, we need to grind the coriander and pudina leaves into a paste. Along with them, we also need to grind green chillies as well for spicy taste.
Let me explain how the cooking is done briefly. Pour some oil into the cooking pot, then continue by adding some chopped onion, ginger garlic paste and tomatoes. Saute the ingredients. Then, add the marinated chicken into the pot. Mix it with the rest. Next, add the green paste made earlier. These will ramp up the flavours.
When it is cooked, check for salt. Add more if you need. Once you see the oils breaking, the cooking is done. Green chicken is ready!
