You can use Malabar spinach from your organic garden, as the main ingredient to prepare a very healthy mixed vegetable curry.
In my last post, I shared how you can prepare Malabar spinach Fry - which is now kid's favorite. Today I am going to share a very simple way of making a mixed vegetable curry that is very delicious as well.
Malabar spinach grows fast, so you can cut some stems from your container garden and utilize them to prepare the dish. It even allows the new stems to come with better leaves, for next use. If you want to have the fry also, just take out the big leaves and keep aside for the fry and follow the process from my previous post.
You can gather the following vegetables to add : Brinjal (Eggplant),pumpkin, tomato, potato, colocasia root and rich gourd. Chop the Malabar spinach leafy part and stems separately and chop other vegetables as shown below. Keep the size of colocasia root smaller, so that it will easily boil.
Then have the following spices : Onion, Garlic, Ginger paste (by grinding them together or if you want, can use ready made available), some chopped Onion, Cummin powder ( better to prepare fresh), Cinnamon (fried and crushed) , Coriander powder, Chili Powder (quantity depends on your taste), turmeric powder and bay leaf. And of course salt 😀.
You can add Sundried Lentil (କଖାରୁ ବଡି - shown above) if you get it - it adds pretty good taste as well as flavour. Fry the Malabar spinach stems and each of the vegetables first for 1-2 minutes with cooking oil (we use mustard oil) of your choice and keep them aside. Then fry the chopped Onion till it becomes golden brown, add the Onion, Garlic, Ginger paste, turmeric powder and fry on slow heat for 3-4 minutes then add Cummin powder, Coriander powder, Chili Powder and bay leaf and fry for another 3-4 minutes( you will get the flavor once its ready).
Now add the chopped tomato and fry for a minute and then add other vegetables except Brinjal, Malabar spinach leaf and Lentil ( Will add them later as they cook fast). Add some water and salt and cook them for 7-8 minutes and then add the Brinjal,Malabar spinach leaf and Lentil and mix them and cook for another 3-4 minutes.
The purpose of cooking these vegetables in the above order is to have them all cooked properly. At the end add the Cinnamon powder and mix it properly to add the flavor.
Now you can serve it with Rice or Roti and other stuffs. We also prepared the Malabar spinach Fry, on kid's demand.
Hope you enjoy this vegan dish which is a healthy delight. We have now included Malabar spinach dishes at least twice a week to fulfill the vitamin needs of our kids. Especially now a days with online classes, its very much essential to have their vitamin A to protect the eyes. And since I am growing them myself organically at the roof top they are readily available. I am sure, if you just search for the benefits of Malabar spinach, you will be tempted to try these dishes as well as grow them. And it very well meets your budget for sure 😀.

Ya, not in touch with sanmi since long - I think, he just gave up. I met him in an art exhibition and brought here - but then you know, most people just give up because of all the rewards etc.
Yes the bitter truth.....he always hold a high respect for you and another one the water pain ter..I forget his name...and interestingly he was my guru..he did helped me hold my nerve in starting days...and given few tips..and simply helped but now feeling like swimming alone here
looks very yummy. Please parcel some. Cheers
Its easy to grow - I have now decided to grow Malabar spinach throughout the year. Especially the kids like the fry very much so its easy to give them some vitamins this way 😀
Process is similar to Dalma I think.
In Dalma, the vegetables are boiled more, so that they mix very well. And we don't use much spices in that, all together a different flavor. Also, you can add many other vegetables to Dalma like raw banana, pappay etc.
And this dish is even very tasty, if you add some small prawns - even the dried ones will do the magic 😁
Ok I got it.
Great vegan dish, great to see other vegan dishes (aside from the overused avocados) :)
@hivehealth
You can always adjust the amount - we tried this first time - we too realized that - even the size had to be even smaller. You learn from experiments.
gorgeous DISH! now Please someone send me some decent masala! ;-) I miss em!! especially curry leaf!
really nice post.. with beautiful pics too.. Im gonna TRY IT even with not good masala!
You should have taken a small plant with you 😀
if only i knew it was going to happen!i planned to come for two weeks only in march.. so i had almost nothing with me! what to dooooo.. suddenly i lost my home and life in India overnight.. 5 months ago now.. which is hard to believe!
Ya, that is hard - I feel, things are going to get better by end of this month and you can travel soon.
You can try the Fry from my other post - Its so tasty that you may just get addicted till you run out of all leaves. Its little rich as a fry though.
I like your recipe. I am a lover of species. I plant some in my garden in pots. Ginger, turmeric, coriander, basil, rosemary. and others,
I like to make curry foods but I can't add that many spices together. The palate of my son, who accompanies me at meals, is not very well prepared for so many flavors.
But I love them. Your spinach looks delicious.
Thanks for sharing.
Just go for the crispy fry - every one will love that.
I will be watching your recipes. I like food with spices. I also planted spinach in my garden for the first time. And I made the sautéed spinach with parboiled potatoes with curry, turmeric and ginger.
Looks absolutely delicious! Love the detail of your recipe. I'll definitely have to give something similar a try soon with what I can find here. Yum!
This is the first time I learned this recipe. So many vegetables you used. Really a delicious and healthy vegan recipe.
Ya, and its pretty tasty as well.
