In my previous post of "healthy shopping thanks to hive" I told you about some of the products I will be using to specifically make healthy desserts and the stevia as a natural sweetener that is a base to prepare most of the recipes that I will bring you soon in my blog.
Before going with the preparation I would like to point out some properties and/or benefits of stevia:
Provides 0 calories
It does not raise blood glucose so it is perfect for people with diabetes.
Its moderate use does not have any side effects or contraindications for the consumer.
It is 15 to 30 times sweeter than sugar, so in a small amount it can make a great contribution to our preparations.
Now let's get on with the preparation:
So as promised I bring you a method to prepare liquid stevia at home from the dried stevia leaf.
We will start by adding in a pot a liter of water approximately, a 50 gr of stevia
We take to high heat for 10 minutes or less, this is important not to exceed 10 minutes because its stevia can be bitter.
After a few minutes we strain the stevia leaves, so it's already quite sweet, but let's take another step to get more sweetness. What you have left you can reserve to repeat the process, of course this will not be as strong the sweetness as the first time, but it will serve.
Now over a low heat we let the stevia evaporate from 1 hour to 1.5 hours.
And they will be quite opaque in color.
How to preserve?
In the refrigerator or a cool place and preferably in an opaque container or covered with aluminum foil.
With this liquid stevia a couple of drops will be enough to sweeten a cup of tea or coffee, and soon I will share with you recipes where we will use it.
PS: I studied a year to be a nutritionist's assistant.
