How to Make Enoki Mushroom Wraps with Tofu Skin

Weekend holidays, it will be very pleasant to be filled with various active activities at home. Moreover, the activity is cooking with the family, this is a very fun activity in my opinion. Cooking for the family with a different menu will greatly affect my confidence, especially since this is a new recipe that I have never tried before.

Some time ago, during my 2nd week vegan shopping challenge, I bought enoki mushrooms at the supermarket. A few days after shopping that week, I was very busy with various things, so when I had some free time, I immediately cooked these mushrooms a few days after shopping. After looking for tofu skin at a local market near where I live yesterday, I wanted to make enoki mushrooms wrapped in tofu skin. It's not difficult to find tofu skin, it turns out that the stock in the grocery store is very abundant.

This dish, inspired from food that is often served in dramas on television, if they usually enjoy enoki mushrooms with tomyam sauce, I want to make something different, namely processing enoki into tofu skin dressing which is a 100% vegan dish. Isn't that fun? I'm not sure, other than in Asian countries it has tofu skin, but if you might look for it in an Asian shop you will definitely get it. Tofu skin if it is processed properly will produce a delicious dish in my opinion, especially when combined with amur enoki, both are the right combination in my opinion.

Materials Used

In preparing this recipe, I used simple ingredients, but it will really impress you. Based on simple spices, here are some of the ingredients I prepared.

  • 100 grams of enoki mushrooms
  • enough tofu skin
  • 2 green chilies
  • 2 bird's eye chilies
  • 2 Spring onions
  • 1 clove of garlic
  • 1 tomato

Preparatory Steps


Step 1
Prepare the mushrooms by cutting, remove the roots and cut into small pieces, then wash thoroughly.

Step 2
Then pour hot water into the mushrooms, let stand for 10 minutes so that the mushrooms are soft and cooked, you can also boil them, but here I prefer to flush with boiling water.

Step 3
Now while waiting for the mushrooms, also flush boiling water into the tofu skin that has been cut into small pieces, wait a few seconds after the soft skin is immediately removed.

Step 4
After everything is done, take one sheet of tofu skin then add enough enoki mushrooms. And roll according to taste.

Step 5
After all rolled up, heat the pan and then apply oil, then cook the enoki mushroom wrap, wait until the outside is browned and then remove. And dont' forget add to salt, when cooking, don't forget to go back and forth.

Step 6
After the mushrooms are cooked, then I prepare the chili sauce, first I immediately cut the chilies, onions and tomatoes.

Step 7
Then then, sauté the red and white onions in a pan, then add the tomatoes and chilies, stir-fry the chilies until cooked, don't forget to add salt and powdered stock. Cook until everything is wilted.

Serve the enoki mushrooms wrapped in tofu skin with a splash of savory chili sauce on top. Now if you don't like chili sauce, you can enjoy it with tomato sauce or chili powder. Serve while the dish is hot, because it is really delicious when enjoyed while hot. Well, thanks for listening to my recipe, and don't forget to try it at home.

This looks very tasty! I usually pick a lot of mushrooms & prepare them myself in many different ways but I've never heard of or tried the enoki mushrooms. I'm only wondering how hot & spicy is this when you added so much chili...?!

Wow, I'm so lucky to be able to harvest mushrooms every time, I can only buy them because edible wild mushrooms are very hard to find unless cultivated.

I think it's not too spicy, because I use regular chili. if you want a spicier taste sensation, I usually use a lot of small chilies, you know, because spicy is my favorite.

It depends where you live & how good you know the Mother Nature around you, especially the places where mushrooms grow. In Croatia, where I live, hunting/picking mushrooms is a tradition & many people here do it every year... I personally know how to recognize approximately 50 different species of mushrooms! 😉
