Carrot and Walnut Oat Bread

Did it happen to you too?
To open the fridge and see all kind of containers, almost empty?
Well, I have a serious problem with this cause I can't stand it. For real, I feel I have to carry all the jars in my back and they feel heavy! I hate it and I'm not exagerating. I really dont like to have dozens of opened jars in my fridge. 😄

And yet....if or when this happens to me, it means I have to get creative or look up for a recipe to get rid of these foods. But hey, I expect to use them wisely, not just throw them away.

And me personally, I found out that a banana bread kind of thing is my escape. Or a pancake recipe. Anyways, something appropiate to these two.

And to mention just a few foods that it's most likely to remain almost empty pretty often, these are a few: peanut butter or any nut butter, jam, milk, cheese, heavy cream, apple sauce, fruit compote, pickles.

Last time I had this situation was a few weeks ago. I had to cook something out of: apple sauce, cashew milk and some oat granola mix I had bought for quite long but nobody liked it that much. Yup, I bought that! 😃

After reading a few recipes, I came out with this version, my own version inspired by a combination of other two recipes.
I wasnt sure if this will be edible but it was. I took some risks in making it! Maybe it was a tiny tiny little too dry or somehow stuffed, dense. But meah...with tea (or without) is just perfect. We're simple people, I dont get fussy for a carrot oat bread. 😅

Here's the recipe:

Ingredients:
Dry Ingredients

  • 3 cups oats
  • 2 cups wheat flour
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1 cup brown sugar
  • 2 Tbsp flaxseed (ground)
  • cinnamon 4 tbsp
  • a little bit of nutmeg
  • a pinch of salt
  • 1 cup walnuts
    Wet Ingredients
  • 450 ml cashew milk
  • 1 cup apple sauce
  • 3/4 cup melted coconut oil
  • 6 eggs
  • 4 carrots (grated)

Instructions:

First, preheat oven to 180° C and put baking paper in a loaf tray.

Start mixing the dry ingredients, except walnuts. Caleb helped with the process.

Caleb helped also with removing any nut shells found in there.

Start beating the eggs with a wisk and meanwhile, melt the coconut butter.

Add grated carrots to the eggs and then wet ingredients too.

Only now add dry ingredients to the mixture. Dont over mix it.

Transfer the mixture into the tray and bake it as much as necessary.
Usually takes between 40 min and 50 min.

This is the result.
The oat bread is super flavorful. Cinnamon and nutmeg 🙈🤎🤎.

This recipe can be improvised, also can be better than this. As I told you, it was just a bit dry for my taste but overall, it wasnt a problem.
I should work on the recipe, see what can be made better.
