INGREDIENTS
600 g flour
1 liter of milk
3 eggs
1 tsp dry yeast
3 art. l. Sahara
melted butter
salt
**STEP-BY-STEP COOKING RECIPE
Step 1
** Prepare fluffy pancake batter. Bring the milk to a boil, if required, and cool or simply heat to 40°C, pour into a large bowl or pan in which it will be convenient to knead the dough. Pour the yeast into the milk, mix and let stand for 10 minutes.
**Step 2
** Sift flour into the milk-yeast mixture, add sugar and knead with a whisk until smooth. Cover the bowl with the future pancake dough with cling film and place in a warm place for 2 hours.
**Step 3
** Separate the whites from the yolks. Slightly heat 50-70 g of melted butter so that it becomes fluid, and mix thoroughly with the yolks. Put the whites in the refrigerator until use.
Step 4
Add the yolk-milk mixture to the batter and mix thoroughly. If the mixture is too thick, add warm water. Cover with cling film and let the dough rest for at least 40 minutes more.
**Step 5
** Beat the whites with a mixer with 1.5 tsp. salt in a lush foam and in portions, gently mixing with a spatula from the bottom up, add to the resulting dough. Start baking pancakes right away.
**Step 6
** Bake fluffy pancakes in a cast-iron skillet, brushing lightly with melted butter before each pancake. Put the finished pancakes in a saucepan and keep under the lid until serving.
