Mi almuerzo de hoy: Vainitas con papas y calabacín / My lunch today: green beans with potatoes and zucchini

¡Saludos amigos! Hoy les presento una receta que tenía tiempo sin hacer y de repente recordé ese aroma de la mezcla de sus ingredientes y aquí les va, espero que les guste su sabor vegetariano y delicioso.

Greetings friends! Today I present a recipe that I hadn't made for a long time and suddenly I remembered that aroma of the mixture of its ingredients and here it goes, I hope you like its vegetarian and delicious flavor.

Ingredientes:

  • 500 gramos de vainitas delgadas
  • 4 papas medianas peladas y cortadas en trozos
  • 1 cebolla grande rallada
  • 4 dientes de ajo triturados
  • 1 calabacín mediano cortado en trozos
  • 2 tomates maduros rallados sin piel
  • Las hojas de 4 ramitas de perejil bien picadas
  • 1 ramita de hinojo cortado fino
  • De 5 a 6 hojas picaditas de yerbabuena
  • 100 ml de aceite
  • Sal y pimienta al gusto

Ingredients:

  • 500 grams of thin green beans
  • 4 medium potatoes, peeled and cut into chunks
  • 1 large onion grated
  • 4 garlic cloves, minced
  • 1 medium zucchini cut into chunks
  • 2 ripe tomatoes grated without skin
  • The leaves of 4 finely chopped sprigs of parsley
  • 1 sprig of fennel, finely chopped
  • 5 to 6 minced peppermint leaves
  • 100 ml of oil
  • Salt and pepper to taste

Preparación: / Preparation:
Quitar posibles venitas de las vainitas, lavarlas y hervirlas por 15 minutos. Colar y reservar.

Remove possible veins from the beans, wash them and boil them for 15 minutes. Strain and reserve.

En una olla poner a calentar el aceite, echar la cebolla y el ajo y dejar que se marchiten bien revolviendo siempre.

In a pot, heat the oil, add the onion and garlic and let them sauté well, always stirring.

Ahora incorporar el tomate y seguir revolviendo, luego echar todos los demás ingredientes menos sal y pimienta y mezclar, poner en fuego medio durante 10 minutos.

Now incorporate the tomato and continue stirring, then add all the other ingredients except salt and pepper and mix, put on medium heat for 10 minutes.

Seguidamente cubrimos la preparación con agua, echamos la sal y la pimienta, revolvemos bien, tapamos la olla y dejamos que se cocine a fuego medio hasta que absorba por completo el agua y quede una salsa espesa.

Then we cover the preparation with water, add the salt and pepper, stir well, cover the pot and let it cook over medium heat until the water is completely absorbed and a thick sauce remains.

Retiramos del fuego, dejamos reposar por 5 minutos y servimos acompañado de queso y pan tostadito. ¡Buen apetito!

Remove from the heat, let it rest for 5 minutes and serve with cheese and toasted bread. Enjoy your meal!
