Thai Pork Red Curry with Bamboo Shoots and Rice Noodles. 🇹🇭

In Thailand, Buddhism is the national religion and 95% of Thai population practice Theravada Buddhism which got influences from India. Besides the Buddhism which we also learn about the spicy seasonings known as the curry spices from India as well.

🇹🇭 Thai curry dishes are usually named after their own colors such as red, green, orange and yellow. So today I’m gonna show you how to prepare a basis daily dish in Thai household and its call Kaeng Phet Moo.

🇹🇭 Kaeng means any soup dish while Phet is to Spicy and Moo refers to Pork in Thai words.

It's a dish of creamy coconut milk with a savory chili paste, sliced of pork collar, blood jelly and bamboo shoots.

Red curry is typically served with lightly fermented rice noodles (Kha Nohm Jeen) or warm jasmine rice which I'll served with rice noodles today. 😀

Rice noodles made from rice starch which is thin pearly white noodles and softly tender with a delight texture and so many step of fermented section and require 3-4 days to completed. If you can't find fresh rice noodles which you can buy the them in Asian grocery stores too.😀

Serving rice noodles with any type of Thai curry will lift up the better taste. The rice noodles will soak up the curry wonderfully. Believed me! 😄

First, bloom the coconut then add the red chili paste and add the meat and add more coconut milk then bamboo shoots. Finally garnished with Thai basil, kaffir lime leaf and red Thai chili.
This is the commonly instructions for cooked the Thai Red Curry by original Thai people. 😆

Here what we need for Kaeng Phet Moo!

 

  • 500 Gram Pork Collar Steak
  • 250 Gram Bamboo Shoots
  • 200 Gram Blood Jelly
  • 250 Gram (Thick) Coconut Milk
  • 250 Gram (Thin) Coconut Milk (Water as optional)
  • 100 Gram Red Curry Paste
  • 2 Tablespoon Plum Sugar
  • 2 Tablespoon Fish Sauce
  • 1/2 Cup Thai Basil
  • 10 Thai Chili
  • 4 Kaffir Lime Leaves
  • 500 Gram Lightly Fermented Rice Noodles

How to prepare the vegetable for Kaeng Phet Moo!

Start with the Kaffir Lime Leaves!

 

  • Separate them into 2 leaves and cut beside both of the side of the stem and set side.

Sliced the chili.

Pick up the Thai basil leaves from the stem.

Cut the blood jelly into equal pieces.

  • Sliced the pork collar steak into the equal pieces.

How to roll the lightly fermented rice noodles.

  • Pull off the rice noodles and separated half and straight the rice noodles and roll it and set aside.

Decorated the rice noodles by put the chili and thai basil leaf over the rice noodles.

Boiled the bamboo shoots!

  • Rinse the bamboo shoots by running water and drop into the hot water over high heat and boiled it for 5 minutes and rinse by running water again.

Boil the blood jelly into hot boiled water for 5 minutes and set aside.

Let's bloom the coconut milk!

 

  • For my method which I'll divided to pour the coconut milk into 4 times to let's the coconut oil cracking beautifully and give the creamy rich curry.

  • Pour 1/4 of coconut milk into the hot wok over medium heat and let's it boiled and stirred continuously.

  • Drop the red curry paste and whisk it together.
  • Pour another 1/4 coconut milk at the second time and whisk together.

  • Bring out the pork!

  • Drop the pork sliced into the wok and stirred it together.

For Thai authentic recipe, just seasoning the Thai red curry by fish sauce and palm sugar. Only 2 things! That's enough to bring out the flavorful delicious taste.

  • Pour the fish sauce and whisk together.

  • Pour another 1/4 coconut milk at the third time and mix together.

  • Drop the bamboo shoots into the wok and add another 1/4 coconut more at the last time.

  • Add the palm sugar and the thin coconut milk, blood jelly, Kaffir lime leaf, chili and Thai basil leaves.
