Stewed stingray fish with rice / Raya guisada con arroz

Cheers to all this delicious community! Although my content is mostly about travel, this time I wanted to share here a divine marine recipe: stingray fish stew accompanied with a simple white rice, really a perfect combination.

Aunque mi contenido es más que todo sobre viajes, en esta oportunidad quise compartir por acá una receta marina divina: guisado de pez raya acompañado con un sencillo arroz blanco, realmente una combinación perfecta.

For those who don't know it, the stingray is that fish with a flattened body and that seems to fly into the sea. A few years ago I first bought some in a supermarket to try, I cooked it stew and it is really very tasty, that's why since then whenever I can I make this dish.

Para los que no la conocen, la raya es ese pescado de cuerpo aplanado y que pareciera volar dentro del mar. Hace unos años compré por primera vez un poco en un supermercado para probar, lo preparé guisado y es realmente muy sabroso, por eso desde entonces siempre que puedo hago este platillo.

Here is the list of ingredients that we will need to prepare this meal:

  • 500 g of stingray fish
  • 1 onion
  • 4 stalks of chives
  • 5 sweet peppers
  • 1/2 bell pepper
  • 6 garlic cloves, crushed
  • 3 small carrots
  • 2 grated tomatoes without skin
  • 3 capers
  • 2 tablespoons of red wine
  • Oil
  • Salt and pepper to taste
  • 1 cup of rice

A continuación la lista de ingredientes que vamos a necesitar para preparar esta comida:

  • 500 g de raya
  • 1 cebolla
  • 4 tallos de cebollín
  • 5 ajíes dulces
  • 1/2 pimentón
  • 6 dientes de ajo machacados
  • 3 zanahorias pequeñas
  • 2 tomates rallados sin piel
  • 3 alcaparras
  • 2 cucharadas de vino tinto
  • Aceite
  • Sal y pimienta al gusto
  • 1 taza de arroz

Preparation: / Preparación:
The first thing we are going to do is boil the stingray fish in a pot for about 20 minutes.

Lo primero que vamos a hacer es poner a hervir en una olla la raya más o menos durante 20 minutos.

In my country, the stingray fish can be found in the supermarket and has an affordable price / En mi país la raya se consigue en el supermercado y tiene un precio accesible

Then we remove the stingray fish from the fire, strain the water and leave it there until it cools and then we can crumble it with our hands. It is important to remove any spines that we find well so that we can eat calmly.

Después retiramos la raya del fuego, colamos el agua y la dejamos allí hasta que se enfríe para luego poder desmenuzarla con las manos. Es importante retirar bien cualquier espina que encontremos para que podamos comer tranquilamente.

The shredded stingray fish / La raya desmenuzada


The next step is to finely chop all the fresh ingredients like onion, chives, sweet peppers, bell pepper, carrots and capers and crush the garlic cloves.

El próximo paso es picar finamente todos los ingredientes frescos como cebolla, cebollín, ajíes dulces, pimentón, zanahorias y alcaparras y machacar los dientes de ajo.

Place about 5 tablespoons of oil in a deep frying pan, let it heat well and fry all this there, when about 5 minutes have passed, add the shredded stingray fish and mix everything well.

Colocamos unas 5 cucharadas de aceite en un sartén hondo, esperamos que se caliente bien y allí sofreímos todo esto, cuando hayan pasado unos 5 minutos, echamos la raya desmenuzada y mezclamos todo bien.

Then add water to cover the preparation and add the grated tomatoes, salt and pepper to taste and the red wine.

Seguidamente echamos agua hasta cubrir la preparación y añadimos los tomates rayados, la sal y la pimienta al gusto y el vino tinto.

Red wine adds spectacular flavor to meals, I love it! / El vino tinto le da un sabor espectacular a las comidas, ¡me encanta!


We already have all the ingredients cooking, so we cover the pan and leave it on the fire until it absorbs almost all the liquid, always making sure that it doesn't stick to the bottom.

Ya tenemos todos los ingredientes cocinándose, así que tapamos el sartén y lo dejamos en el fuego hasta que absorba casi todo el líquido, vigilando siempre para que no se nos pegue en el fondo.

Finally, to accompany this delicious stewed ray, we prepare a simple white rice and good appetite!

Finalmente, para acompañar esta deliciosa raya guisada, preparamos un sencillo arroz blanco y ¡buen apetito!

I think I would have a hard time eating this species, I remember how we almost petted these curious fellas on some beaches in Mexico :) Before the sunset, they used to gather by the beach in literally just a few inches of water, almost crawling out of the sea onto the sandy shore to say hi :) Amazing creatures.

I understand you completely! I saw giant rays in Galapagos, although from the boat. When we establish a close relationship with any living being, our attitude towards them changes and we don't see them the same, we don't want to eat them ... I have not eaten any meat for more than 18 years, only fish is still in my diet, lately I have read about the importance of rays for the ecosystem, it is similar to that of sharks, here in Venezuela a type of shark called "cazón" (dogfish) is usually eaten a lot, I have stopped buying it, I must do the same with the stingray.

Thank you for being so environmentally aware and inspiring Sofia :) I know people in Venezuela have other stuff to worry about than the environment and the wellbeing of animals so I am really happy to know there are still people there like you who care about these things too. You have my utmost respect :)

OMG, it looks so delicious, I am drooling! I imagine any other fish would do? I won't be able to find this type of fish where I live, unfortunately, but I quite like to cook this dish.

I also need to substitute peppers as I have someone in the family who can't stand it... but will post a pic when I cook it and let you know how we found it!
