Good question.You should remove the chillis after the dish is flavoured with it before adding water and creating gravy, else it gets super spicey. I removed chillis before adding tomatoes, so this was not spicey. TOmato is sweet na so added

3/ Long Green Brinjal - 1kg
Cut them and soak them in salt water, else they turn Black. After 30 minutes, drain them & roast them in oil till they are cooked on open pan. Takes about 10 to 15 minutes for all brinjals to be cooked. #foodie

10/ Add tomatoes, saute them. You can add cilantro & coriander leaves now.

It's not spicey. I added chilis and removed it before making gravy and sambar powder. Very mild amount of spice, its not spicy atall. Remember that tomatoes are sweet and tangy so that balances the spicy elements

4/ Two big Onions
Tomatoes - 6 big or should equal volume of chopped onions
Spinach a handful

5/ Heat oil in medium flame for 2 mins. Then add 1/2 tea spoon mustard seeds, close pan and let them splutter (2 to 3 minutes)
